KHORAK RECIPE: Traditional Family Sweets Recipe

This is a cherished family recipe, passed down through generations—from my grandmother to my mother,and now to me. More than just a sweet dish, it carries the warmth of tradition, the love of family, and the wisdom of those who came before me. Every bite is a reminder of the hands that have lovingly prepared it, the stories shared over its aroma, and the bond that connects us across time. Not only is it a delicious and nourishing treat, but it also holds the essence of home and heritage, making it truly special. We made this dish especially in Winter

Ingredients:

1. Milk                                                  0.5 liter 

2.Sugar                                               1/2 cup

3. Cardamom powder                         3 Tbsp

4. Wheat Flour                                    Half-kg

 5. Ghee                                               2 cups

7. Coriander powder                            4Tbsp

8. Tragacanth Gum Powder                 1 cup 

9, Chopchini Powder                            1 Tbsp


 

Method:

First, take a pot and add half a kilogram of milk to it.

Boil Milk
 

 Add ½ cup of sugar, a pinch or half a teaspoon of salt, and   cardamom powder. Stir the milk until sugar is dissolved. Let the milk boil. Then, turn off the stove.

Now, in a separate large pot, add half a quarter cup of ghee or oil.

After 1 minute, add half a kilogram of wheat flour to the ghee and stir it for 4 minutes.

When the flour is completely mixed with the ghee, add 3 tablespoons of poppy seed powder, then stir the mixture again for 3 minutes.

Next, add 2 cups of tragacanth gum powder. And keep stirring the mixture for the next 10 minutes.

And keep stirring the mixture for the next 10 minutes.

After adding Tragacanth Powder

After 10 minutes, add 4 tablespoons of dried coriander powder and stir the mixture well.

Then, add 1½ tablespoons of Chopchini powder and stir for another 3 minutes. Continue stirring until the mixture turns dark brown.

Once the mixture turns dark brown, add the boiled milk to it.

                     And keep stirring until the ghee separates from the mixture.

NOTE: This signals that Khorak is ready.

 After that, present the khorak  in the tray. Garnish it with crushed almond topping and  crushed pistachio .

 Finally, serve it. You can store it in airtight containers for up to five days and enjoy a bite in the morning with tea or whenever you have a craving. Enjoy the delicious Khorak.đź’“
